One of the biggest conundrums of getting back to good, natural food is what to do about sugar. We are all so attuned to it that not having any feels like a real hardship.
Stevia has probably the lowest glycemic index of all sugar alternatives, but does have a bitterness to it. The green stevia is least processed.
Chopped or pasted, dried dates are a great whole, sweet food, but no good for diabetics or candida sufferers.
Agave is NOT recommended. It is over-processed, and has a terrible glycemic index profile, only a little better than the High Fructose Corn Syrup which is devastating the health of a generation as I write.
Yacon is a really interesting option and may work for diabetics. It is not as sweet as some of the alternatives, but has some genuinely beneficial properties for health.
